Isot Biber are traditional fermented chili flakes from the Urfa region in southeastern Turkey. For this special delicacy, aromatic Urfa chilies are first sun-dried and then traditionally fermented over several days. Through this elaborate production process, Isot Biber develops its characteristic dark color as well as its intensely spicy, slightly smoky, and pleasantly fruity aroma.
The Urfa Biber chili is known in Turkey for its special aroma and is grown by small-scale farmers. During traditional processing, the chilies are dried in the sun during the day and wrapped in cloths at night, which initiates natural fermentation. This creates the typical notes of dried fruit, dark chocolate, and a mild, smoky heat.
Isot Biber is one of the specialities of Turkish cuisine and is excellent for kebabs, köfte, stews, legumes, vegetable dishes, or spicy sauces. Isot Biber also adds exciting aromatic accents to grilled meat, lamb, pasta, or even dark chocolate and desserts.
