In contrast to many industrial products, this pasta exhibits a distinctly pronounced character: the spaghetti is not only al dente but also develops a delicate, slightly elastic tension when chewed. This is achieved through the combination of various durum wheat varieties like Levante and San Carlo, which are specifically used for binding and elasticity.

The surface is slightly rough, ensuring that sauces adhere particularly well to the pasta. At the same time, the structure remains stable and clear even after cooking.

This pasta comes from Mancini in Le Marche – one of the few producers in Italy who exclusively process their own durum wheat. Different wheat varieties such as Levante and San Carlo are specifically combined to provide the pasta's precise structure and elasticity.

Taste

Clear, subtly grainy, and balanced with a fine structure and characteristic bite. The slightly elastic texture provides a precise, pleasant mouthfeel.
