The Carnaroli Risotto Rice "Acquerello" from Piedmont is one of Italy's most renowned rice specialties. The Carnaroli rice variety is considered one of the best for risotto, as it can absorb a lot of liquid while maintaining its structure.
The traditional Rondolino family dedicates itself exclusively to the cultivation of this high-quality rice variety, combining artisanal experience with a precise, elaborate manufacturing process.
After harvesting, the rice is stored for one to three years, which stabilizes the starch and ensures the rice remains particularly firm to the bite when cooked. Subsequently, the grain is gently processed and enriched with its germ again using a patented method. This results in a risotto rice with an exceptional structure that optimally binds liquid and allows for a particularly creamy consistency.
Acquerello has a fine, nutty, and clear taste, with a creamy yet firm texture. Ideal for classic risottos as well as modern, light rice dishes.
