The Mezze Maniche are short, wide tube noodles with a clear structure and a firm bite. Their shape and slightly rough surface allow them to absorb sauces particularly well, making them ideal for rich yet finely balanced dishes.
This pasta comes from Mancini in the Marche region – one of the few producers in Italy that exclusively processes its own durum wheat. Different wheat varieties such as Levante and San Carlo are specifically combined to create the pasta's unique texture.
This is evident when eating: the pasta is not only al dente but also has a slightly elastic, yielding texture that creates a particularly pleasant and balanced mouthfeel.
The freshly ground durum wheat is gently processed and then slowly dried at low temperatures, which keeps the structure clear and stable.
The pasta gets its typical, slightly rough surface from being processed with bronze dies – crucial for an optimal connection with the sauce.
