A classic Turkish summer dish
On warm summer days, this dish is one of my favorites. Crispy Mücver, fresh Cacık, Arpa Şehriyesi with tomatoes, and golden-brown fried cauliflower combine to create a simple, aromatic summer meal. Fresh herbs, good olive oil, and a few high-quality ingredients are the focus.
Ingredients for the Mücver

2 medium zucchinis

2 eggs

4–5 tbsp flour

250 g yogurt

1 small cucumber

1 handful fresh dill

1 small garlic clove (optional)

Ingredients for the Arpa Şehriyesi

200 g Arpa Şehriye

2 ripe tomatoes

Ingredients for the cauliflower

1 small cauliflower

1 egg

Preparation
Mücver
Roughly grate the zucchini and place in a sieve. Mix with a little salt and weigh down with a plate or other weight. Drain for at least 30 minutes. Then thoroughly squeeze out the zucchini.
Finely chop the dill, mint, and spring onions. Add them to the zucchini along with the eggs, flour, Pul Biber, salt, and pepper, and mix to form a uniform mixture.
Heat some olive oil in a pan. Spoon in portions of the mixture and fry until golden brown and crispy on both sides.
Cacık
Roughly grate the cucumber and mix with yogurt. Finely chop the dill and add. Add a little garlic if desired and season with salt. Chill until serving.
Arpa Şehriyesi
Lightly toast the Arpa Şehriye in olive oil. Add the finely diced tomatoes and cook for a few minutes. Pour in a little water and simmer on low heat until cooked. Season with salt.
Cauliflower
Break the cauliflower into small, bite-sized florets.
Whisk the egg and lightly salt it. Mix the flour with a little salt as well. Dip the cauliflower pieces first in the egg and then in the seasoned flour.
Heat plenty of olive oil in a pan and fry the cauliflower pieces until golden yellow and crispy. By seasoning the egg and flour, the salt penetrates the vegetable during frying, ensuring a particularly balanced flavor.
Serving Suggestion
Mücver, Cacık, Arpa Şehriyesi, and crispy cauliflower combine to create a light summer dish full of fresh flavors. A high-quality olive oil, added just before serving, pairs particularly well.
